ROOT FOR FRUIT
Cut fruit and enjoy in abundance.

HALL AND OATMEAL
Prepare oatmeal according to package and top with your favs.

I YAM A TACO
2 onions, diced
2 jalapenos, diced
1 can fire roasted tomatoes
1 bunch of kale, de-stemmed and chopped
2 cans black beans, drained and rinsed
2 yams, peeled and diced
1 tbsp cumin
1 tbsp cayenne
1 tbsp chili powder

1. Sauté onions and jalapeno in a little water. Bring to simmer
2. Combine tomatoes, black beans, and kale to the pan. Add spices. Cook together.
3. Add yams at the end and cook until soft.
4. Make tacos out of mixture and top with guacamole.

PUT THE LIME IN THE COCONUT
2 onions, diced
2 carrots, chopped
2 jalapenos, diced
2 thumbs ginger, peeled and minced
Juice of 3 limes
2 cans coconut milk
1 cup red lentils

Rice
Spinach

1. Sauté onions, carrots, jalapenos, and ginger in some water. Bring to simmer.
2. Add lime juice, coconut milk, and lentils. Combine thoroughly. Bring to a boil and simmer with the lid on until lentils are soft and not crunchy.
3. Cook rice according to package in a large pot. Turn off the stove when fully cooked, then add fresh spinach and stir in. Spinach will wilt.

LAZY AND SWEET
Bake some sweet potatoes at 425 degrees for as long as it takes to get them soft and caramelized

GET YOUR FREEKAH ON
1 cup freekah (or you can use another grain like quinoa)
1 green onion, green and white parts
1 carrot, chopped and steamed
2 cucumbers, chopped
2 cups garbanzo beans
¾ cup vegan yogurt
Diced fresh herbs, like cilantro or mint

1. Cook freekah according to package.
2. Combine the rest of the ingredients together.

MAKING THE ROAST OF IT
Roast your favorite veggies.
Put them on top of your favorite salad.
Finish it off with your favorite dressing.

WIGGITY WIGGITY WRAP
Put leftovers in a wrap and eat it.
(To make cashew cream sauce, blend 1 cup of cashews with ½ cup water in high speed blender. Add lemon juice and salt to taste.)

MONSTER MASH
1. Boil and mash your favorite root veggies, such as gold potatoes, yams, sweet potatoes, and carrots.
2. Add garlic powder, salt, and vegan milk.
3. Add fresh spinach with stove turned off to wilt the spinach and get more greens in.
