Cauliflower Green Peas Coconut Rice
Healthy vegan recipe which you can enjoy in your diet or anytime. The richness of coconut makes the dish taste so perfect that you will not be able to stop resisting it. Check out the recipe below and let me know in the comments.
Oil 2 tbsp
Cumin Seeds 1 tsp
Garlic (chopped) 1 tbsp
Cauliflower (grated) 1 cup
Salt to taste
Turmeric Powder ½ tsp
Red Chilli Powder 1 tsp
Onion (cubes) 1 small
Garam Masala Powder 1 tsp
Green Peas ½ cup
Tomato (cubes) 1 small
Coconut (grated) ½ cup
Coconut Milk ¾ cup
Lemon Zest a pinch
Lemon Juice 1 no.
Coriander (chopped) 3 tbsp
1. Heat oil in a pan, add cumin seeds after they crackle add chopped garlic.
2. Add grated cauliflower and cook for 5 to 6 minutes.
3. Add turmeric powder, red chilli powder and salt to taste.
4. Cook for further 2 minutes and add onion cubes, ½ tsp of garam masala, green peas and tomato cubes.
5. Mix it well; add grated coconut and coconut milk.
6. Cook it for further 2 to 3 minutes.
7. Add little bit of lemon zest, lemon juice, fresh coriander, ½ tsp of garam masala and mix well.
8. Remove in a serving bowl and serve hot.
